Yummy Penne Pasta in Cream Sauce with Sausage

This yummy meal was delivered to us after the birth of our newest edition, Reilly. It was so tasty and I don't want to lose the recipe. Here it is:

1 T butter
1 T olive oil
2 cups sliced onions
2 1/2 t chopped garlic
1 lb mild Italian sausage
1/2 lb hot Italian sausage
2/3 cup dry white wine

1 14.5 oz can diced tomatoes
1 cup whipping cream
1/2 cup fresh parsley
S & P to taste
1 cup grated parm
1 lb mini penne pasta

Melt butter with oild in a large skillet over med-high heat. Add onion and garlic and saute until golden brown and tender, about 7 min. Add the sausage and saute until golden brown and cooked through, breaking up the meat as it cooks, about 7 min. Drain any excess fat from the skillet. Add the wine to the skillet with drained meat and boil until almost all the liquid has evaporated, about 2 min. Add whole can of tomatoes and simmer about 3 min. Add cream and simmer until the sauce thickens, about 5 min. Stir in parsley and season to taste with salt and pepper.

Serves 6

This freezes well too. So why not double it and make 1 meal for tonight and freeze the double portion in a gallon size ziploc bag.

Shredded Chx sandwiches

Okay are you ready for this? SOOO easy and Beyond yummy! I got it off someone's blog.

Crock pot
4-6 pieces of raw chx

take 1/2 cup brown sugar
3/4 cup Italian drsg
bottle of bbq sauce ( sweet ray's ---the best)
2 tablespoons worcestershire sauce

blend the above stuff together and then throw the chx in and mix around
cook for 4 or 6 hours on low and waaalaaaaa!
It shreds sooo easily and then put it on a bun of your choosing!
add a side dish or no dish at all! The kids love this and I could get it three days straight! Seriously, i do eat it three days straight.

Chicken Barbecue Sandwiches

I made this tonight for the first time and the hubby gave it 5*'s.  It was really good.  I'll definitely make it again.  We had some leftover bbq chicken so I was able to use that. 
1/2 c. ketchup
1/4 c. vinegar
2 tbsp. chopped onion
1 tbsp. worcestershire sauce
2 tsp. packed brown sugar
1/4 tsp. dry mustard
1 clove garlic, crushed
1 1/2 c. cut up cooked chicken
4 hamburger buns, split
Heat all ingredients except chicken and buns to boiling over medium heat, stirring constantly, reduce heat.Simmer uncovered, stirring occasionally, for 10 minutes. Stir in chicken. Cover and simmer until chicken is hot, about 5 minutes. Fill hamburger buns with chicken mixture.
