4 bone-in pork chops<br />
1 1/4 cups whole mil<br />
1 large egg, lightly beaten<br />
1 med white onion, sliced<br />
1 1/2 cups chicken or veg broth<br />
1 bunch kale, tough stems and ribs removed, leaves cut into pieces<br />
4 teaspoons oil<br />
2 Tablespoons flour <br />
<br />
Heat oil in large skillet over high heat. Season both sides of chips with S & P. Cook for about 3-4 minutes per side. Transfer to dish and tent with foil. Reduce heat to medium. Add onion and cook for about 8 minutes. Add 2 Tablespoons flour and stir. Slowly whisk in broth and bring to boil stirring for about 3 minutes. Add kale and cook until wilted about 4 minutes. 1. Mix up this sauce to your taste: <br />

3/4 cup Mayonnaise, a squeeze or two of lime, teaspoon garlic powder<br />

2. Chop some cabbage, cilantro, onion and tomato to add to your taco.<br />

3. Heat your corn tortillas. I like to heat them one by one on a frying pan with no oil. <br />
<br />
<br />
When the fish sticks are done place one to two on a tortilla, add the sauce and the fixings. Super Easy and Super Yummy!<br />

I had them at my grandma's once as a kid and I believe they were boiled to death. I finally tried them again this year and they are my new favorite vegetable. I have broiled them with a little olive oil, minced garlic, salt and pepper in the oven and they turned out great. This is another great recipe. Super yummy I might add. 1/3 cup water<br />
1 can Rotel tomatoes and green chiles<br />
1 can black beans, drained and rinsed<br />
1 box Jiffy corn bread mix, plus ingredients to make cornbread<br />
1 cup shredded cheddar cheese<br />
sour cream<br />

In a large skillet, cook beef over medium heat until no longer pink;
drain. Stir in the water and taco seasoning. Simmer for 5 minutes. Stir
in 1/2 cup of cheese, Rotel tomatoes and black beans. Spoon into a
greased 8x8 baking dish. <br />

Prepare corn bread mix according to package directions for corn bread.
Spread over beef mixture. Bake, uncovered, at 400° for 20 minutes. <br />
<br />
Sprinkle with remaining cheese. Bake 3-5 minutes longer or until cheese is melted. Serve with sour cream and salsa.<br />

** I didn't have a can of rotel tomatoes and green chiles. I used a can of diced tomatoes and another can of green chiles. I did not use sour cream or salsa on top and it was super bueno! It was so tasty and I don't want to lose the recipe. Here it is:<br />

1 T butter<br />
1 T olive oil<br />
2 cups sliced onions<br />
2 1/2 t chopped garlic<br />
1 lb mild Italian sausage<br />
1/2 lb hot Italian sausage<br />
2/3 cup dry white wine<br />

1 14.5 oz can diced tomatoes<br />
1 cup whipping cream<br />
1/2 cup fresh parsley<br />
S & P to taste<br />
1 cup grated parm<br />
1 lb mini penne pasta<br />

Melt butter with oild in a large skillet over med-high heat. Add onion and garlic and saute until golden brown and tender, about 7 min. Add the sausage and saute until golden brown and cooked through, breaking up the meat as it cooks, about 7 min. Drain any excess fat from the skillet.
Add the wine to the skillet with drained meat and boil until almost all the liquid has evaporated, about 2 min. Add whole can of tomatoes and simmer about 3 min. Add cream and simmer until the sauce thickens, about 5 min. Stir in parsley and season to taste with salt and pepper.<br />

Serves 6<br />

This freezes well too. So why not double it and make 1 meal for tonight and freeze the double portion in a gallon size ziploc bag.

I love french toast and I'm always looking for great recipes for french toast. This particular recipe is an overnight french toast recipe that would be a great addition to a brunch or a nice treat for the weekend.<br />
1 loaf sweet French bread pre-sliced<br />
1cup brown sugar<br />
1/2 cup butter<br />
2 Tbsp corn syrup<br />
6 eggs<br />
1 cup milk<br />
1 Tbsp vanilla<br />
2 Tbsp cinnamon<br />
1) melt sugar, butter and syrup in sauce pan. Bring to boil and pour in 9x11 baking dish.<br />
2) cut off crusts and make 2 layers over caramel mixture.<br />
3) Beat remaining ingredients and pour over bread and caramel. Let soak overnight in fridge.<br />
4) Bake for 35-50 minutes at 350 until it puffs like a souffle.<br />

Slice 6 croissants open lengthwise and place 6 halves face up in a casserole dish.<br />

Mix 9 eggs, 1 3/4 cups milk and 1/3 cup syrup. Beat until thoroughly blended.<br />
Sprinkle most of one container of blueberries over the croissants, then pour about half the egg mixture over the croissants. Push any dry portion of the croissants down into the mixture to make sure all are moist.<br />

Place the remaining croissant halves face down in the dish so that they cover the first group. Sprinkle the rest of the blueberries over the dish. Pour the rest of the egg mixture over the croissants repeating the above procedure. Bake at 350 for 45 minutes. 1 can Campbell's Cream of Chicken Soup<br />
1/2 cup sour cream<br />
1 cup Pace Picante Sauce or another similar brand salsa<br />
2 tsp chili powder<br />
2 cups chopped cooked chicken (Perfect for the day after you've made a baked chicken or bought a rotisserie chicken)<br />
1/2 cup shredded Monterey Jack Cheese<br />
6 flour tortillas (6") warmed<br />
1 small chopped tomato<br />
1 green onion sliced<br />

1. Stir 1st 4 ingredients in med bowl.<br />
2. Stir 1 cup of above mixture with chicken and cheese in large bowl.<br />
3. Divide chicken mixture among tortillas. Roll up the tortillas and place seamside up in 2 quart shallow baking dish. Pour remaining mixture from step 1 over filled tortillas.<br />
4. Cover baking dish. Bake at 350 for 40 min or until enchiladas are hot and bubbling. 1lb. ground chuck<br />
1 small finely chopped onion<br />
2 cloves chopped garlic<br />
1 cup tomato sauce<br />
1/4 cup fresh parsley (I didn't have this)<br />
1 large egg<br />
1 tsp salt (I left this out since I thought the Worcestershire sauce would probably have plenty)<br />
1/4 tsp fennel seeds (didn't have this either)<br />
1 cup cooked rice<br />
<br />
I added some bread crumbs and a couple Tbs of Worcestershire sauce<br />
<br />
1 - preheat oven to 350<br />
2- Combine all ingredients with your fingers in a large bowl. Do not over mix.<br />
3- Pat into a 8-by-4 inch loaf and place on lined baking sheet. Bake for 1 hour and 15 min or unil thermometer registers 160 and meat is no longer pink.]<br />
<br />
Let stand 10 minutes before slicing.<br />

So I perused some recipes and combined a few ideas. It turned out awesome!<br />

I started with a <a href="http://en.wikipedia.org/wiki/Dutch_baby_pancake">Dutch baby</a>. To me it tastes like a thick crepe. We usually make one at least once on the weekend sprinkled with cinnamon and powdered sugar.<br />
<br />
Heat oven to 400. While oven is heating place 9x12 glass pan in oven with a stick (or T less) of butter so that the butter melts.<br />
<br />
Mix 1 cup flour, 1 cup milk, 1/4 cup sugar, 4 eggs, a sprinkle or so of cinnamon, a t. of vanilla. (Check on butter. Take it out of the oven when it is almost all melted.)<br />
<br />
Pour batter into pan.<br />
<br />
Bake for 15 minutes<br />

Sift some powdered sugar on top.<br />
<br />
This alone makes for a tastey treat.<br />

I had already sliced up a bunch of strawberries and put 2-3 T of sugar on them so that they were making a nice syrup.<br />

Next I took 1 package of cream cheese, a 1/4 cup or less of sugar, a dallop or so of plain yogurt (optional) and whipped until smooth.<br />

I spread this mixture on the puffed pancake (Dutch Baby) and spooned the strawberries on top. This is a dish that my sister-in-law and her mom made for us soon after my daugter was born. It was so yummy! I had to have the recipe. This is one of my favorite crock pot recipes for chicken but I often make it in the oven because I don't plan well enough in advance. So I turned it into one of my favorite quick chicken breast recipes.<br />
<br />
-one cooked whole body chicken, in bite size pieces. Cook a whole body chicken on the stove with an onion by bringing cold water to a boil and then simmering it on the stove for 1 1/2 hour-2 hours. (I have boiled 2-3 breasts and then shredded them. Much faster and easier. I have also had baked chicken on the first night. Then the next boiling the remaining chicken and taking all the meat off.)<br />
<br />
-12 corn tortillas, torn up in bite size pieces (I have used flour when I didn't have corn- works very well also)<br />
<br />
-mix together a part of a small can of mild green chilie salsa (to taste), 1 can of cream of chicken soup, 1 can of cream of mushroom soup, one small container of sour cream (I think it's 6 oz) I use light. I often substitute plain yogurt for the sour cream and it comes out just as great.<br />
<br />
layer the chicken, cream mixture, and tortillas. I do about 6 or 9 layers<br />
<br />
cook on low for about 4 hours<br />
