I am trying this meatloaf tonight since it looked a bit easier than the one I usually make.
1lb. ground chuck
1 small finely chopped onion
2 cloves chopped garlic
1 cup tomato sauce
1/4 cup fresh parsley (I didn't have this)
1 large egg
1 tsp salt (I left this out since I thought the Worcestershire sauce would probably have plenty)
1/4 tsp fennel seeds (didn't have this either)
1 cup cooked rice
I added some bread crumbs and a couple Tbs of Worcestershire sauce
1 - preheat oven to 350
2- Combine all ingredients with your fingers in a large bowl. Do not over mix.
3- Pat into a 8-by-4 inch loaf and place on lined baking sheet. Bake for 1 hour and 15 min or unil thermometer registers 160 and meat is no longer pink.]
Let stand 10 minutes before slicing.
